Vegan & Gluten Free Cornbread Stuffing
This is another fantastic side dish for your Thanksgiving dinner, or any dinner really. Who says stuffing has to be for turkeys? I use my homemade vegan gluten free cornbread for this one, but you can use any cornbread recipe you prefer. Get ready for a delicious vegan, gluten free, soy free, kick-ass dinner this holiday!
Vegan & Gluten Free Cornbread Stuffing
Ingredients
1 loaf plain cornbread (recipe link in post)
1 cup craisins
1 3/4 cups vegetable stock
3 tbsp coconut oil melted
1 tbsp maple syrup
pinch of salt and pepper
Instructions
Take the loaf of cornbread and cut it into cubes, then bake at 400F. (This will turn it into "Cornbread Croutons", coincidentally a fantastic addition to salads!)
Toss the croutons, craisins, vegetable stock, melted coconut oil, maple syrup, salt, and pepper in a small casserole dish.
Cover with foil but poke a few holes in the top to let out moisture, and bake for 50 minutes at 350F.
Remove from the oven and serve warm.
