Vegan & Gluten Free Cornbread Stuffing

This is another fantastic side dish for your Thanksgiving dinner, or any dinner really. Who says stuffing has to be for turkeys? I use my homemade vegan gluten free cornbread for this one, but you can use any cornbread recipe you prefer. Get ready for a delicious vegan, gluten free, soy free, kick-ass dinner this holiday!

 
 

 
 

Vegan & Gluten Free Cornbread Stuffing

 
 

Ingredients

  • 1 loaf plain cornbread (recipe link in post)

  • 1 cup craisins

  • 1 3/4 cups vegetable stock

  • 3 tbsp coconut oil melted

  • 1 tbsp maple syrup

  • pinch of salt and pepper

Instructions

  1. Take the loaf of cornbread and cut it into cubes, then bake at 400F. (This will turn it into "Cornbread Croutons", coincidentally a fantastic addition to salads!)

  2. Toss the croutons, craisins, vegetable stock, melted coconut oil, maple syrup, salt, and pepper in a small casserole dish.

  3. Cover with foil but poke a few holes in the top to let out moisture, and bake for 50 minutes at 350F.

  4. Remove from the oven and serve warm.
