Craisin Cornbread

The craisins make it a bit more festive and fall-ish and add a hint of sweet and tart flavor, but the plain version of the cornbread is just as delicious. It’s one of the easiest baked goods you’ll ever make, and I really mean that! With only 9 ingredients and one bowl, you can make this cornbread in under a half hour, and have it ready to serve with your dinner (or eat it for breakfast!).

Craisin Cornbread

 
 

Ingredients

  • 2/3 cup brown rice flour

  • 1 + 1/3 cup cornmeal

  • 1 tsp salt

  • 3 1/2 tsp baking powder

  • 2/3 cup maple syrup

  • 1 tbsp apple sauce

  • 1 cup unsweetened almond milk

  • 1/3 cup grapeseed oil

  • optional: 3/4 cup craisins

Instructions

  1. Combine flour, cornmeal, salt, and baking powder in a large mixing bowl.

  2. Stir in maple syrup, apple sauce, almond milk, and oil until you have a smooth batter.

  3. Add craisins and stir.

  4. Transfer batter to a greased 9x3 loaf pan.

  5. Bake for 20 minutes at 400F, then remove from oven and let cool. Slice and serve.
