Gingered Yam Soup
One of my favorite warming winter soups! Based off the recipe for a soup I loved in college. Best served with lots of delicious bread, crackers, and some crunchy kale in there too.
Gingered Yam Soup
Ingredients
5 cups diced sweet potatoes
1/2 onion, diced
3 cups coconut milk
pinch of cayenne to taste
2-3 whole bay leaves
1 tsp chopped fresh ginger
Instructions
Add all the ingredients to a large pot and bring to a boil, then lower the heat a bit and simmer until the sweet potatoes are tender, about 20-30 minutes.
Remove the bay leaves.
Use an immersion blender to blend all the ingredients in the pot and stir well.
Enjoy with crackers and bread.
