Gingered Yam Soup

One of my favorite warming winter soups! Based off the recipe for a soup I loved in college. Best served with lots of delicious bread, crackers, and some crunchy kale in there too.

 
 

 
 

Gingered Yam Soup

 
 

Ingredients

  • 5 cups diced sweet potatoes

  • 1/2 onion, diced

  • 3 cups coconut milk

  • pinch of cayenne to taste

  • 2-3 whole bay leaves

  • 1 tsp chopped fresh ginger

Instructions

  1. Add all the ingredients to a large pot and bring to a boil, then lower the heat a bit and simmer until the sweet potatoes are tender, about 20-30 minutes.

  2. Remove the bay leaves.

  3. Use an immersion blender to blend all the ingredients in the pot and stir well.

  4. Enjoy with crackers and bread.
